Cast roaster for glass
ceramic cooktops
A premium quality, hand cast
roaster made from non stick
coated aluminium glass, devel
oped by Gaggenau specially for
the 18 x 41.5 cm roasting zone
on glass ceramic cooktops.
Since the roasting zone is cov
ered precisely, energy use is
optimal and the thick heat con
ducting base guarantees an even
heat distribution and optimum
heat conser vation. The lid of the
roaster can also be used as
cookware e.g. for roasting. The
non stick coating enables low
fat cooking and ensures easy
cleaning. Can also be used in a
76 or 90 cm wide oven.
Cataly tic special enamelling
The special enamelling at the
back of ovens means that ovens
without the pyroly tic system
are now easier to clean. During
the process of catalysis, dir t is
broken down by oxidation with
atmospheric ox ygen at tempera
tures upwards of 20 0°C. This
cleaning takes place while the
oven is in normal use. If the oven
is ver y dir ty, you are advised to
clean the non coated sur faces
by hand, and then heat the oven
up to about 20 0 °C for a few
minutes. This is a par ticularly
good way of dissolving fatty
stains. The pyroly tic system is
the only system capable of
optimum oven cleaning.
Centrifugal grease filter
The air current from the table
ventilation system is rerouted
several times in this filter, there
by ensuring that grease par ti
cles are efficiently captured and
expelled. The filter elements can
be cleaned in the dishwasher.
Cleaning programme in the
Combi -steam oven
Soiling inside the oven is soft
ened with the help of steam. The
inside of the oven can then be
easily cleaned.
Clear ice
The R X 496 fridge freezer com
bination produces gourmet
quality clear ice via a procedure
deployed by Gaggenau for the
first time in a domestic refrig
erator. A special freezing proc
ess ensures that chlorides and
fine par ticles are removed from
the water. The clear ice has a
neutral taste as it is freshly pro
duced on an ongoing basis in a
hermetically sealed area which
is insulated against all odours.
Unused clear ice thaws at regu
lar inter vals and the resulting
water runs off via the securely
installed outlet.
Climate class
The functions of a refrigerator
depend on the appliance’s
ambient temperature. An appli
ance’s climate class indicates
the range of ambient tempera
tures for which it is suitable:
SN : 10 °C to 32 °C, N : 16 °C
to 32 °C, ST : 18 °C to 38 °C,
T : 18 °C to 43 °C.
Coanda effect
This aerodynamic technique
is used by Gaggenau to ex tract
the cooking fumes which oc
cur at the front of a cooktop
more efficiently. Par t of the air
flow generated by the fan exits
through the top of the ventila
tion hood and is guided down
wards over the rounded front
edge, intercepting fumes which
might other wise get past the
front of the ventilation hood.
This new air conduction system
enables efficient air purification
even at lower power levels. As
a result, less energy is used and
less temperate air is removed
from the room. At the same
time, the noise level is reduced
considerably.
Condensation dr ying
During the dishwasher’s dr ying
cycle, the hot steam condenses
in the form of droplets on the
sides of the heat exchanger –
which is filled with cold water –
and the water then runs off.
The heat exchanger exploits the
residual heat for dr ying pur pos
es by siphoning off the water
into a container on the side.
Com pared to conventional ap pli
ances, this procedure reduces
energy consumption by 15 per
cent, and results in hygienic
dr ying without any additional
energy or an ex ternal air supply.
Container for
second coffee type
In addition to fresh beans, a
second ground coffee type can
be used.
Cooking timer
The time at which you want one
or more cooking zones to be
automatically switched off can
be selected up to 90 minutes
in advance. The integrated clock
can also be used as a shor t
term timer, irrespective of the
appliance’s other functions.
In the case of appliances from
the Vario cooktop 40 0 series,
the cooking timer is available as
an accessor y via the connecting
strip with timer. Each connect
ing strip can be used to operate
two appliances.
Cooled housing with
overheating protection
Gaggenau ovens have a tem
perature protection system to
protect the appliance and the
fitted units from overheating as
well as an automatically cooled
housing, which continues to
cool down the appliance af ter
the oven has been used.
Core temperature probe
with automatic shut- off
The core temperature probe in
ovens and Combi steam ovens
controls the temperature in
the centre of food. Appliances
switch themselves off once the
desired core temperature has
been attained. This ensures that
no matter what is being cooked,
it is always cooked just the way
it should be. The core tempera
ture probe can also be removed.

Deep fr yer
Basket hangers: Two baskets
can be inser ted into the cover
for draining simultaneously.
Cleaning level (Vario 40 0):
Water for cleaning the deep
fr yer can be brought to the
correct temperature of around
40 °C in the appliance itself.
Fat melting setting: This gen
tle, smoke free heating method
enables fat to be used consider
ably longer. It is equally suitable
for use of oil or solid fat.
Swing - out heating element:
For easy cleaning of the stain
less steel vat, the heating
element can simply be pulled
out and up.
Clear ice.
With a neutral taste and free of chlorides, fine par ticles
and air pockets. It is produced via a special freezing procedure.
Three -zone, professional
kitchen design:

Foam expansion zone: The
upper par t of the fr ying basin
is widened to prevent the oil
from over flowing during the
deep fr ying of food contain
ing water or which is deep
frozen.

Deep -fr ying zone: Located
directly above the electro n
ically controlled, swing out
heating element.
·
Cold oil zone: Food par ti
cles which break off during
deep fr ying sink into the cold
oil zone under the heating
element, where the oil tem
perature is lower than in the
deep fr ying zone. The par ti
cles cannot burn and release
no flavour into the oil. This
means that fat can be used
for much longer.
Defrost assistance in the
freezer compartment
During defrosting, the bottom
drawer of the freezer ser ves as
a collector for the condensation
water. A discharge nozzle, which
can be removed easily, is in
stalled in the base. During de
frosting, the minimum storage
temperature is kept constant in
the 4 star freezer compar tment.
Descaling programme
The vaporiser container, which
is used to generate steam in the
interior of a Combi steam oven
with a water tank, or a steam
oven, can be descaled ef for t
lessly using this programme.
Simply fill the water tank with a
descaling solution and the pro
gramme takes around 30 minutes.
